Red Quinoa

Quinoa triples in size when cooked. So a quarter cup of dried quinoa produces about three fourths cup cooked.
Quinoa comes in a variety of colors and organic quinoa can be purchased all year round.

Before cooking, rinse quinoa in a fine mesh strainer and remove any seeds that do not look appetizing. 

Use a one to two ratio (quinoa to water). I used a quarter cup of quinoa and a half cup of water.

Bring to a boil, then cover and reduce to low heat. Cook for twenty five minutes. 
To puree for infants add extra liquid such as homemade vegetable broth or organic apple-juice to thin. Toddlers and older kids can eat cooked quinoa as is. Try adding fruits and vegetables to make a fabulous meal!

To make a delicious breakfast, add two steamed pears to this puree!

One oven roasted acorn squash will blend perfectly with this recipe. Add about three fourths a cup of homemade vegetable broth to thin.
