Coconut Milk

Coconut Milk

Organic coconut milk can be purchased in the refrigerator section or shelf stable.

I personally recommend starting off with the one bought refrigerated as the preservatives in the shelf stable one may cause a reaction in some children. By starting off with the cold version first you can make sure your child doesn't react to the milk as opposed to the preservatives. Once you know that your little one does well with it you can try the shelf stable kind.

Coconut milk is a light vegan milk that can be used in a multitude of ways. You can drink it straight, mix it into purees or make popsicles for teething (or treats).

If your little one is lactose intolerant this is a great substitute for cow's milk.

I use the refrigerated So Delicious Coconut Milk. Yum! Using my silicon freeze tray and three and a half popsicle sticks I made delicious and nutritious popsicles for my teething little one. But these would also be perfect just as a regular treat!

Cut the sticks in half and poor milk in each portion. Place the sticks in the milk and the whole thing goes into the freezer. I started in the morning and took it out in the evening, storing in a labeled ziplock bag. This process could easily be used by any puree as well!

Adding coconut milk to any puree instead of water adds extra flavor and nutrients.

Replace the oat's cooking liquid with coconut milk and add an apple for this yummy meal!

A half cup of coconut milk (or the meat of one young coconut), four steamed leaves of kale, two kiwis and a pear makes this amazing meal!
