Acorn Squash

One medium acorn squash produces about ten ounces of puree.
Acorn squash are in season from October through December, but often can be found year round.


Pre-heat the oven to 400 degrees. Wash the outside of the squash and then cut in half from stem to bottom. Scoop out the seeds. You can save these for roasting or compost them. 




Place them skin side down in a baking dish. Bake for an hour. Take the squash out and let cool. The peel will come right off and puree the meat. For older babies you can leave the meat as is and let baby have some finger food!



Add three cooked apples to this recipe for a tasty acorn squash applesauce!

Three fourths cup of cooked red quinoa will mix nicely with one acorn squash. Add about three fourths a cup of homemade vegetable broth to thin.
